Conservateurs. Ce sont des meubles destinés à stocker les crèmes glacées en attente de vente, ou destinés à la vente de celles-ci. Le conservateur est essentiellement constitué par une cuve en acier galvanisé sur laquelle est plaqué extérieurement le serpentin refrigérant. La tendance est à réaliser maintenant ces cuves en aluminium oxydé et à intégrer le circuit de réfrigération dans l'épaisseur du métal.

OBS

Il faut noter que si, à l'origine [les conservateurs] avaient pour vocation de conserver des crèmes glacées, ils peuvent être utilisés pour la conservation et la distribution de tout produit surgelé.
